Happy Chinese New Year, or as my extended family would say, ‘Sing Jia Ju Ee!’
Chinese New Year is a time to gather together with family, wear red for joy and happiness, feast the day away, and avoid cleaning as you don’t want to end up sweeping out all the good luck for the coming year.
Sydney comes to life during this celebration with dancing lion and dragon performances, fireworks, and dragon boat races at Cockle Bay Wharf, Darling Harbour.
In Chinese astrology every zodiac year is linked with an animal and an element. This year it’s the rooster, and fire.
Roosters are proud, confident, hardworking and punctual. Fire is associated with brilliance, warmth, passion and spark.
As one who lives in a firey household (myself a fire tiger, my husband a fire dragon) I’ve been inspired to whip up a ‘fire rooster roll’.
Fire Rooster Roll
Baguette, cut to desired length
1T whole egg mayonnaise
1/4 avocado, sliced
1/4 Lebanese cucumber, sliced
1/4 cup barbecued chicken breast meat, skin on, sliced
Salt and pepper
Slice baguette in half lengthways and apply mayonnaise. Place chicken evenly on top.
Give chicken a big, generous splash of Tabasco for some fire!
Add cucumber and season with salt and pepper.
Place avocado on top.
Whole and with an icy cold drink to wash away the flaming sensations your tongue is experiencing.
