Need a fresh burst to your sandwich or just want an easy and exciting salad to accompany it?

You can’t go past tabouli!

Ingredients

large bunch of flat leaf parsley, leaves only, washed and chopped
1/4 cup cracked wheat, pre-soaked (covered in water for at least 3 hours or overnight)
1 lemon, juiced
1 clove garlic, minced
1/4 Spanish onion, finely diced
2 tomatoes, diced
1 medium Lebanese cucumber, diced
3T extra virgin olive oil
sea salt and freshly ground black pepper

 Method

Add drained cracked wheat to a mixing bowl.

Cover in the lemon juice.

Add garlic and onion.

Add tomato and cucumber, and season with S&P.


Throw in the parsley and toss all ingredients to combine.

Drizzle with olive oil and toss gently once more.

 
Eat it!
