Well today I needed a tasty snack in a hurry – as in 5 minutes ago!
Threw the avo, feta, tomato and basil together atop toasted spelt bread, popped in under the grill to warm for a minute (ever so slightly melting the feta cheese) and with a sprinkle of salt and good crack of pepper, I finished it with a drizzle of extra virgin olive oil. Let me tell you, it was as though I’d been transported to Italy and was enjoying a nice, light alfresco lunch along the piazza.
With a few kalamata olives and a crispy, chilled chinotto.
