Chimichurri is a vinegary green sauce made from herbs and a few other simple ingredients.
Originally from Argentina, it’s often used to flavour grilled meats – and I personally cannot eat chorizo without it!
If you haven’t tried it yet, trust me, it’s delish!
bunch of flat leaf parsley, washed and lower stems removed
bunch of coriander, washed and lower stems removed
1T oregano (dried is ok if you don’t grow fresh)
1T dried chilli flakes
2 small garlic cloves, peeled
2T fresh lemon juice
2T apple cider vinegar (or white vinegar)
1/2t each of sea salt and black pepper
1/3 cup olive oil
In a food processor, blend all ingredients until it forms a loose green sauce which appears consistent, yet retains some texture.
With spicy, grilled chorizo on a freshly buttered white roll!
