basil pesto chicken baguette

So I was thinking about sandwiches today (I do that a lot), and I was wondering about the kind of sandwich that appeals to everyone (or almost everyone)… Definitely not smoked salmon and cream cheese, or rare roast beef with hot English mustard, I thought. It’s unlikely to be an egg sandwich, or even an antipasto toasted sandwich on Turkish bread…

It’s got to be a chicken sandwich!

Tried and tested, chicken and sandwiches are a perfect match. Chicken with its nice, mild flavour can be paired perfectly with hundreds – possibly thousands – of other ingredients.

For my effortless chicken sandwich you can’t go past the simplicity of a fresh baguette to hold it all together.


fresh baguette
1T butter
SSP’s basil pesto
3 or 4 baby cos lettuce leaves, washed
roasted chicken breast, chopped or shredded (BBQ chicken also works well)
salt and pepper
1/4 avocado, sliced
Spanish onion, to garnish
basil leaves, to garnish

Sandwich Assembly:

Cut baguette to desired length, and then in half length-ways.
Butter one side generously, and spread SSP’s basil pesto onto the opposite side.
Lay baguette flat and add baby cos leaves along its length.
Add roast chicken and season generously with salt and pepper.
Top with avocado and garnish with Spanish onion, finishing with freshly picked basil leaves.

Eat It

Beneath a shady tree with an Aperol Spritz.

    Every time I read one of your posts it makes me so hungry!! I am totally trying this when I make my pesto. Apparently the French Patisserie opposite Thomas Dux in Crows Nest does amazing baguettes so that will be my next stop. Thank you L!


    1. Yes it does! Also Ganache French patisserie at Castlecrag has amazing baguettes but they often run out by the time I amble up there!
